In the spring, nothing gets me more excited than shaking off the winter slump by loading up a bowl with crisp, vibrant greens again! Just like my roundup of summer salads, these spring salads highlight simple, wholesome, and seasonal ingredients. I often make my chicken salad with crunchy veggies for a refreshing lunch or light dinner, or my favorite strawberry salad for spring gatherings like Easter or Mother’s Day. And while these are my tried-and-true spring salad favorites, I’m always testing new combinations in my kitchen.
