Name something better than fresh, warm, sweet rolls baking in the oven. I’m talking about that pillowy soft dough, the gooey, melt-in-your-mouth centers, and a slather of cream cheese frosting that you just can’t help but lick off your fingers.

Over the years, I’ve spent countless hours in my kitchen perfecting the ultimate sweet roll dough. Yes, it’s a labor of love, but it’s always worth it. Whether you’re craving my classic, world-famous cinnamon rolls or are looking for a bright and fruity twist, I’ve got you covered.

These sweet roll recipes are perfect for holiday mornings (hello, Mother’s Day brunch!), lazy Sundays, or anytime you need a little baking therapy. Grab your rolling pin, and let’s get baking!

Can I make any of them gluten-free or dairy-free?

Unfortunately, I cannot recommend a gluten-free flour substitute in any of these recipes.

However, you can easily make any of them dairy-free by simply using dairy-free milk, dairy-free cream cheese, and dairy-free butter!

Don’t forget these tips when baking sweet rolls

  1. Don’t overheat your milk. The milk should be between 105 and 115 degrees F. The yeast won’t activate well if it’s colder, and if it’s too hot, it will kill the yeast, both of which mean the rolls will not rise. A simple tip is to dip your finger in the milk — it should feel similar to warm bath water. If you warmed it up too much, simply wait a few minutes until it cools down enough to touch.
  2. Use room temperature eggs. If the dough calls for eggs, make sure they’re at room temp. Cold eggs could affect the yeast or mix with the melted butter and cause it to coagulate. To bring your eggs to room temperature, simply place them in a bowl of very warm water for a few minutes.
  3. Use bread flour. Bread flour makes ALL the difference in achieving softer, fluffier rolls because of its higher protein content.
  4. Flour your work surface and rolling pin. This will prevent the dough from sticking to the surface or to the rolling pin.

Make your sweet rolls overnight

  1. After the first rise, you’ll place the rolls into your greased pan (as directed in the recipe).
  2. Cover the pan and place it in the fridge overnight, or for no longer than 18 hours.
  3. In the morning, bring the rolls to room temperature by leaving them on the counter for 60 to 90 minutes, or until dough is puffy (this is known as the second rise).
  4. Finally, bake as directed!

How to freeze sweet rolls (2 different ways)

  • To freeze before baking: the dough should be frozen after the first rise (once it’s rolled up with the filling in and cut). Place into a pan and cover well, then place in the freezer. When you are ready to bake, let the dough thaw in the fridge — preferably overnight — then put in a warm spot for 30 minutes to 1 hour before baking to activate the second rise. Bake the rolls as directed.
  • To freeze after baking: allow the rolls to come to room temperature after baking, then you can choose to either freeze the entire pan, making sure they are well wrapped or covered in an airtight container, or you can choose to freeze individual rolls. When ready to eat, defrost the rolls at room temperature, then warm them in the oven at 350 degrees F for 10-15 minutes, or you can warm them up individually in the microwave for 20-30 seconds (once defrosted). I prefer to freeze them before they are iced, and then frost them when ready to eat. All of the icings are also freezer-friendly!

Tool you’ll need to make sweet rolls

  • Stand mixer. You’ll want to use the dough hook on your stand mixer to easily knead the dough before rolling it out. Don’t have a stand mixer? No worries! You can also mix the dough in a large bowl and then knead it by hand for 8-10 minutes.
  • Wooden spoon. I recommend mixing your dough together with a wooden spoon.
  • Rolling pin. For rolling out that beautiful dough. Pro tip: if you don’t have a rolling pin, you can also flour up a wine bottle!
  • Serrated knife. Using a serrated knife will help you cut the sweet rolls out after you roll the dough up. You can also use unflavored dental floss.
  • 9×9-inch pan. I recommend using a 9×9 inch baking pan so that the rolls fit well and bake properly.
