Soup season might just be my favorite time of year. Yes, it’s cold, but there’s something about simmering a big, warming pot of soup that just fills me with warmth and joy. Over the past few years, I’ve loved sharing super unique, flavor-packed soups with all of you, and I’ve made it my mission to make sure that they’re hearty enough to be a full meal.
Many of you have been prioritizing protein in your meals, so I put together 15 of my best high-protein soup recipes to make during weeks when you need some cozy AND protein-packed. How to store & freeze leftover soup
- To store: store any leftovers in an airtight container in the refrigerator for up to 5 days. Simply reheat in the microwave or back in your pot on the stovetop.
- To freeze: I would suggest leaving out grains (like pasta, noodles, or couscous) if you’re planning to freeze any of these soups. Allow the soup to cool completely before placing it into airtight, freezer-friendly containers. Place in the freezer for up to 3 months. To reheat, simply allow the soup to thaw in the refrigerator before reheating on the stovetop or in the microwave. Cook your grains separately and add them to your reheated soup when you’re ready to serve.
