These party-ready Chipotle Deviled Eggs are made with a smoky, tangy, and slightly spicy chipotle yogurt filling and topped with crispy bacon, putting a bold twist on the classic finger food!

I’m rarely one to run towards the tray of deviled eggs at Easter brunch, birthday parties, and other special occasions. Mustard is on my “least favorite foods” list and completely turns me off of classic deviled eggs. To me, it’s the best way to ruin a perfectly good hard boiled egg.

 

But these mustard-free Chipotle Deviled Eggs? I can’t resist ‘em! 

I drew inspiration from my chipotle aioli when I came up with this recipe. The creamy filling is made from the hard boiled egg yolks, mayo, yogurt, a splash of vinegar, and, of course, chipotle seasoning. Topped with crumbled crispy bacon and fresh chives, each one has the perfect balance of smoky heat and velvety creaminess. Seriously, so good! 

Like all of my hard boiled egg recipes, I prefer a hands-off approach. Boiling eggs in the Instant Pot is my method of choice because I can crisp up the bacon and start on another party snack, like my chili roasted pistachios, while I wait for them to finish. From there, it’s just peel, slice, pop out the yolks, and mash them with everything else—which takes all of five minutes.

Ingredients

This list is to provide further clarification on a few of the ingredients. The full ingredient list is below in the recipe card.

Eggs – Older eggs tend to be easier to peel after boiling (especially if you’re using the Instant Pot ​​method).

Bacon – The bacon is cooked until crispy, then crumbled and sprinkled on top of the deviled eggs. It adds some crunch and a smoky contrast to complement the creamy filling. You can technically use store-bought bacon bits as a substitute, but freshly cooked bacon always tastes better. 

Mayo + yogurt – These two work together to create an ultra-tangy, creamy-smooth deviled egg filling. Instead of yogurt, you can use all mayo (like classic deviled eggs) or swap the yogurt for sour cream. Just make sure it’s full-fat for the best texture.

Chipotle seasoning – This is where the signature smoky-spicy kick comes in. If you don’t have chipotle seasoning on hand, it’s well worth buying. However, you can substitute a canned chipotle pepper in adobo sauce in a pinch. Just mince one pepper very finely, mix it into the filling, then taste and add more peppers or sauce as needed.

Apple cider vinegar – A small splash brightens the filling with a tangy note that you would definitely miss if it weren’t there. Don’t skip it! If needed, white wine vinegar, fresh lemon juice, or even pickle juice can work in its place. 

Chives – For garnish. Thinly sliced green onions, fresh parsley, or cilantro also work well.

Instructions

Step 1: Hard boil the eggs. If you haven’t already, hard boil your eggs either in the Instant Pot or on the stovetop. After boiling, shock the eggs in a bowl of ice water.

Step 2: Cook the bacon. Meanwhile, cook the bacon in a skillet until golden and crisp. Transfer the strips to a paper towel-lined plate. 

Step 3: Peel and slice the eggs. Once the eggs are cool enough to handle, peel and cut them in half lengthwise.

Step 4: Make the filling. Gently squeeze each egg to pop the yolks out and into a large bowl. Mash them with the mayo, yogurt, chipotle seasoning, apple cider vinegar, salt, and pepper until mostly smooth.

Step 5: Fill and serve. Spoon (or pipe) the yolk mixture back into each egg white half. Top the deviled eggs with crumbled bacon and fresh chives, then serve and enjoy.

Tips and FAQs

  • For the best results, mash the yolks really well. Use a fork or potato masher to mash them until smooth before adding everything else. If you want an ultra-silky filling, you can even push the yolks through a potato ricer.
  • Don’t overfill the eggs—just a spoonful of filling is plenty. If you’re piping the filling with a pastry bag fitted with a star tip, do so slowly. You don’t want to overdo it and run out of filling before the last egg!

Tip

Fresh eggs are notorious for being a pain to peel. If possible, use older eggs to make peeling way easier. After boiling, plunge the eggs in an ice bath for 5 to 10 minutes, and then the shell should slide right off. 

Variations

Here are some fun ways to make this chipotle deviled eggs recipe your own:

  • Instead of bacon – Crisp up some ground chorizo, diced chorizo links, or even diced pancetta to sprinkle on top. Substitute tempeh bacon for a vegetarian version. 
  • Add more fun toppings – Mix and match the bacon and chives with other tasty toppings, like pickled onions, jalapeños, cotija cheese, or sliced black olives. 
  • Spicy deviled eggs – While the chipotle seasoning gives the filling a slight kick, you could always kick things up a notch with a diced jalapeño, a dash of hot sauce, or cayenne pepper in the filling.
  • For dairy-free deviled eggs – Either replace the yogurt with extra mayo or dairy-free yogurt or vegan sour cream to keep the filling creamy, tangy, and satisfying without any dairy.

Serving suggestions

Whether you’re hosting a laid-back game night or your family’s Easter brunch, these chipotle bacon deviled eggs tend to disappear fast. It’s always wise to pair them with a lineup of other appetizers everyone will love, like zucchini corn fritters, BBQ chipotle chicken wings, fried tomatoes with corn salsa, and BBQ chicken sliders

And don’t sleep on the power of a good dip! A big bowl of tortilla chips with black bean corn salsa, queso, and/or bacon guacamole is always welcome at the party.

How long do you boil eggs for deviled eggs?

For the stovetop method, boil the eggs for 10 to 12 minutes to yield fully set yolks without that gray-green ring. If you’re using the Instant Pot, I recommend the 5-5-5 method: 5 minutes at high pressure, 5 minutes of natural release, and 5 minutes in an ice bath.

How spicy are these chipotle deviled eggs?

I’d say these eggs are somewhere between mild and medium on the spicy scale, but it really depends on your heat tolerance and how much chipotle seasoning you use. 

Storage 

Refrigerator: Fully assembled chipotle deviled eggs with bacon stay fresh in an airtight container in the fridge for up to 2 days.

Make ahead: To save time, cook the bacon, boil the eggs, and prepare the filling 1 day in advance. Refrigerate everything separately in airtight containers. This way, all that’s left to do is assemble the deviled eggs and keep them covered in the fridge until you’re ready to serve.

Ingredients

  • 12 eggs
  • ¼ cup mayo
  • ¼ cup yogurt
  • 1 teaspoon chipotle seasoning
  • ½ teaspoon apple cider vinegar
  • salt and black pepper
  • 2 slices bacon optional, crumbled
  • chives for garnish

Instructions

  • If you haven’t already, hard boil the eggs. I like to do this following my Instant Pot method, but any way you like to boil eggs is fine.
  • While the eggs are cooking, cook the bacon in a skillet over the stove, then transfer to a paper towel; set aside.

  • Once the eggs are cool enough to handle, slice them in half vertically. Gently squeeze each egg and the yolk should pop right out. Do this over a large bowl until all of the egg yolks have been added. To that same bowl, add the mayo, yogurt, chipotle seasoning, apple cider vinegar and a pinch of salt and pepper.

  • Use a fork or a potato masher to mash the mixture until only a few lumps remain.

  • Spoon the mixture back into the eggs until there isn’t anymore remaining. Sprinkle the crumbled bacon and chives over top and enjoy!
