It doesn’t take much to make roasted baby bella mushrooms feel gourmet. I dressed them in savory dried herbs and seasonings to complement their natural earthy, umami flavors. My secret weapon, balsamic vinegar, is the key to their subtle caramelized crust and sweet flavor.
Each mushroom is like a little flavor bomb that is so easy to prepare!
Recipe features
- Simple herbs, seasonings, and balsamic vinegar give these roasted mushrooms their time under the spotlight.
- A versatile dish that’s great as a side or as a topping on pasta, salads, steaks, and more.
- They’re ready in less than 30 minutes! Throw them together during busy weeknights or for your holiday meal.
Ingredients
Mushrooms – I like to use baby bella mushrooms (AKA cremini mushrooms) for their mild flavor and meaty texture. Almost any medley of mushrooms can be roasted, so feel free to get creative.
Balsamic vinegar – This adds a slight tang and complex sweet flavor that compliments the natural umami flavor of the mushrooms.
Herbs – I dressed the mushrooms in dried thyme and fresh parsley, giving them a pop of green and the best herbal flavor. Play around with the herbs as much as you want; I included some suggestions for you in the Variations section below.
Seasonings – Salt, pepper, and garlic powder are all you need to give the mushrooms an extra savory pop.
Instructions
Step 1: Clean and slice the mushrooms. Wash any dirt or debris from the mushrooms, then dry and quarter them.
Step 2: Season. In a large bowl, toss the mushrooms with olive oil, balsamic vinegar, thyme, salt, pepper, and garlic powder until well coated.
Step 3: Bake. Transfer the mushrooms to a lined baking sheet and roast in the oven until nicely browned.
Step 4: Garnish. Garnish the oven roasted mushrooms with a final drizzle of balsamic vinegar and fresh chopped parsley on top, then serve and enjoy!
Tips and FAQs
- Remember to clean the mushrooms before roasting. Soak them in a bowl of cold water or brush off the dirt with a damp paper towel.
- For some additional savory flavor, sprinkle the mushrooms with Parmesan cheese after roasting.
- Looking for ways to serve your oven roasted mushrooms? Enjoy them as a simple side dish; use them as a flavorful topping on salads, steak, pasta, and chicken; fold them into an omelet or frittata; or use them in a classic mushroom stroganoff recipe.
Tip
I highly recommend tossing and flipping the mushrooms halfway through cooking, as this helps them roast evenly.
Variations
- Change the herbs – Rosemary, chives, tarragon, oregano, and basil will also pair nicely with the roasted cremini mushrooms.
- Add more seasonings – Change up the flavor by seasoning the mushrooms with a sprinkle of red pepper flakes, onion powder, and/or paprika in addition to the other seasonings.
- Garlic soy mushrooms – Marinate the quartered mushrooms in a mixture of soy sauce, minced garlic, fresh ginger, balsamic, salt, pepper, and brown sugar.
How long does it take to roast mushrooms in the oven?
Quartered baby bella mushrooms take about 20 minutes to soften and caramelize in the oven. Keep in mind that the cooking time may vary depending on the type of mushrooms you use, how they’re prepared, and how many you choose to roast.
Can you air fry mushrooms instead?
Sure! Arrange the seasoned mushrooms in a single layer in the air fryer basket, then air fry at 400ºF for 8 to 10 minutes, tossing halfway through.
What kind of mushrooms are best for roasting?
I prefer smaller mushrooms like cremini or white button mushrooms, but this roasting method will work with anything from shiitake to portobello to oyster mushrooms! Just be aware that you may need to adjust the roasting time based on the size of the mushrooms.
Can you roast mushrooms with other vegetables?
Yes, roasting mushrooms with vegetables on the same sheet pan is a great way to save time and oven space. Pair them with other quick-cooking vegetables, like sliced bell peppers, carrots, cherry tomatoes, zucchini, broccoli, cauliflower, or squash.
Why are my oven roasted mushrooms soggy?
Mushrooms will naturally release moisture as they cook but if they’re soggy when they come out of the oven, it’s likely because they were too wet. I like to dry the mushrooms with paper towels after rinsing them under water and before adding the seasonings.
Also, roasting them at 450ºF will help you avoid soggy mushrooms. Quick cooking at high heat is the way to go; slower, lower cooking methods will yield soggier results.
Storage
Refrigerator: Store the roasted mushrooms in an airtight container in the fridge for 4 to 5 days. Reheat them in the microwave, air fryer, or oven.
Freezer: Transfer the cooled mushrooms to a freezer-safe bag or airtight container and freeze for up to 9 months. Let them thaw before reheating.
