What makes hasselback potatoes so special is their accordion-style flair. Picture perfectly sliced Russet potatoes with crispy skins and soft and fluffy insides. Personally, I love to season them with butter and savory seasonings, but you can have a little more fun by putting your own spin on the flavors.

It circulates hot air around the spuds, ensuring crispy skins and soft insides without needing more than a couple of tablespoons of oil. Melted butter – This is the secret to beautifully moist, golden, and rich-tasting potatoes. Use non-dairy butter if you’re vegan or want to keep this recipe dairy free.

Garnish – I like topping hasselback potatoes the same way as a regular baked potato—with chopped fresh chives and sour cream!
Step-by-step instructions
Step 1: Slice. Wash the potatoes and cut them into about ¼-inch slices, leaving some space at the bottom (don’t cut all the way through).
Step 2: Season. Whisk the butter and seasonings together in a bowl. Drizzle half of the mixture on top and between the potato slices.
Step 3: Air fry. Place the potatoes in the air fryer and cook for 15 minutes. Then, brush the potatoes with the remaining butter mixture and continue cooking until they’re fork tender.
Step 4: Serve. Serve the potatoes hot from the air fryer and top them with sour cream, chives, and any other toppings you like. Enjoy!

Yup! Follow the same steps in the recipe card to make hasselback sweet potatoes in the air fryer, but swap the savory seasonings for a dash of cinnamon, nutmeg, and a drizzle of maple syrup.
How long does it take to cook hasselback potatoes in the air fryer?
I found that the potatoes took around 25 to 30 minutes to cook to soft and pillowy perfection in a 375ºF air fryer.

Preheat the air fryer at 375 F.

Cut the potatoes into about ¼ inch slices leaving some space at the bottom (make sure not to cut all the way through the potatoes).

In a bowl, mix the butter, garlic powder, smoked paprika, salt, and pepper together. Add half of the mixture on top and in between the cracks of the potatoes.

Add the potatoes to the air fryer and cook for 15 minutes. Then brush the remaining oil mixture to the potatoes and cook once again for 10-15 minutes or until the potatoes are fork tender.
