If you want a classic breakfast but you’re also craving chocolate, I have one of the most delicious breakfasts for you to try.

These healthy protein waffles are packed with a ton of chocolatey flavor that will satisfy any chocolate lover, yet they have the nutrition of a protein bar.

Chocolate protein waffle stack

Not only is this a great way to help you hit your protein goals for the day, but when you eat a plate of chocolate for breakfast, you’re sure to set yourself up for a really good day.

Plus, these protein waffles are extremely customizable, and you can even add some additional protein if you need to get some more quality protein into your diet in a fun way.

With around 300 calories and 18 grams of protein for the entire batch, this is a great recipe that the whole family can enjoy.

And hey, if you prefer chocolate pancakes, I’ve got a recipe for that too!

What’s the best waffle mix to use for protein waffles?

PEScience waffle mix

For the recipe, we’re using a complete waffle mix that requires only adding water. Of course, we’re going to doctor it up a bit to make it chocolate, but I believe the waffle mix itself should be extremely simple.

That’s where PEScience Protein Waffle Mix comes into play. In fact, this is my product that I personally formulated, so I cannot speak highly enough about it.

Of course, I’m a bit biased, but I truly believe this is the best protein waffle mix out there, and it can hold its own against any regular waffles, too.

If you’re tired of dry, mediocre protein powder waffles, these will change your life. Crispy on the outside, yet still soft & fluffy on the inside… it doesn’t get any better.

Give it a try for yourself and use the code “matt” to save 10% on your order- you won’t regret it.

How to make chocolate protein waffles

Thanks to the ease of the protein waffle mix we’re using, it’s incredibly easy for us to make these healthy waffles.

In a medium bowl, combine the protein waffle mix with cocoa powder, sugar, and a dash of salt.

Mix all of the dry ingredients together to make your chocolate waffle mix.

Slowly stir water into the bowl until you get a nice thick batter.

If you want a little extra protein, you can use milk in place of water. For extra flavor, you can even use chocolate milk!

While the batter rests, plug in your waffle maker to allow it to heat up. Allowing the waffle batter a chance to sit for a few minutes helps to achieve a crispier and fluffier waffle.

Spray your waffle maker with non-stick cooking spray and spoon or pour batter directly into the center of the waffle maker.

Mini chocolate waffle batter

Waffle batter expands a bit while it cooks, but in this case, it won’t aggressively expand, so you can fill the waffle maker close to the edge.

If you’re using a mini waffle maker, you’ll be able to make 3 waffles. If you prefer a Belgian waffle, you can fill the entire Belgian waffle maker without worrying about it.

Once the waffle is a beautiful golden brown, remove it from the waffle maker and add it to your plate.

Mini chocolate waffle

Since these chocolate protein waffles aren’t insanely sweet, they’re closer to dark chocolate protein waffles. I prefer this, because that means you can get creative with your toppings.

In my case, I like to melt down some chocolate chips to drizzle over the top along with additional chocolate chips.

You can also top with nutella, peanut butter, maple syrup, or fresh fruit. There’s no wrong way to waffle.

If you want to meal prep, you can also make a double batch of big batch of waffles instead of a single serving. Freeze the leftover waffles, then toss the chocolate waffles into the toaster or toaster oven the next time you need a quick breakfast.

Adding extra protein to your waffles

Sure, you could technically make chocolate protein powder waffles with nothing but protein powder, eggs or egg whites, and baking powder, but do you know what that’s going to taste like?

Chocolate protein powder!

If you need a low carb waffle, it works in a pinch, but in my opinion, it just doesn’t taste very good.

If you want to bump up your protein intake, here’s what I recommend.

Chocolate Belgian waffle

Option 1: Add 1/2 scoop (roughly 15 grams) of chocolate protein powder to your waffle mix. This will give you an extra 12 grams of protein (although it will vary based on the exact protein powder you use).

Option 2: Add 1 full scoop (about 30 grams) of chocolate protein powder to your waffle mix. This will give you an extra 24 grams of protein, which is quite the upgrade for this recipe.

Note: I only tested this with a whey/casein blend protein powder, but I’d imagine whey protein powder would work great too. I did not test with plant-based protein, but based on my Vegan Protein Pancakes recipe, it should work with vegan protein powder! Use your favorite protein powder and you should be totally fine.

Remember that when you add protein powder to your mix, it’s going to lead to waffles that are a little bit drier than we’d hope for- that’s just the nature of protein powder.

You’ll need to add additional liquid to your waffle batter to compensate for the extra protein powder, and if you’re using chocolate protein powder, you can leave the additional cocoa powder out of this recipe.

When you add protein powder, it will also increase the volume a bit, so you’ll end up with 1-2 extra waffles depending on your waffle maker.

Personally, I think the best way to add extra protein is to stick with a half scoop because I find a full scoop to end up being too dry.

But, to each their own.

Instructions

  1. Add your protein waffle mix to a bowl along with cocoa powder, sugar, and a dash of sea salt. Mix until combined.
  2. Prep the waffle batter by slowly stirring your water or milk into the dry ingredients until you have a thick batter. Don’t worry about it being perfectly smooth- we don’t want to overmix the batter.
  3. While the batter rests, plug in your mini waffle maker or Belgian waffle maker to allow it to heat up. Allowing the waffle batter to rest will help it to thicken slightly, leading to fluffier and crispier waffles.
  4. Spoon the waffle batter into the center of the waffle maker. If you’re making mini waffles, two large spoonfuls per waffle should do the trick, but waffle makers can vary in size so it may be slightly different for you.
  5. Melt 15g chocolate chips in the microwave to make a quick chocolate sauce and drizzle over the top of your chocolate protein waffles along with additional chocolate chips for even more chocolate flavor.

Notes

  • You can use any waffle mix you’d like, but I cannot recommend my own protein waffle mix enough. If you want waffles that are crispy on the outside but still soft and fluffy inside, this mix will not disappoint you.
  • Add chocolate chips directly to the batter if you prefer to not mess with topics. If you’re like me, you’ll want to eat these waffles with your hands, so you should definitely consider stirring those chocolate chips right into the waffles.
  • For additional protein, you can swap the cocoa powder out for roughly half a scoop of chocolate protein powder. While the final protein waffles will be a bit more dry, they’ll still be delicious and packed with protein.
